From the roaster
The best of the best Ethiopian coffee this year seems to come from Yirgacheffe, once again. And in particular the area around Worka. It’s the first time we buy coffee from this all famous washing station called Danche. Not that we weren’t interested in the past; it’s just god damned difficult to lay your hands on it, cause very high in demand from specialty coffee roasters all over the globe.
In 2019, SNAP Specialty Coffee built their new wet mill in a small hamlet called Danche in the Chelbesa Village with the hope of purchasing high-quality ripe cherries from the nearby farmers in the village. The fermentation tanks of the wet mill are made of ceramic to bring out clarity in lots processed and to speed up the fermentation by retaining heat inside the tank.
